Ingredients
salad dressing
- 2 large cucumbers
- 300g cherry tomatoes
- ½ small red onion
- ½ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 60g feta cheese, crumbled, optional
- 3 tbsp extra virgin olive oil
- 1½ tbsp fresh lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- ½ tsp dried oregano
- ½ tsp sea salt
- ¼ tsp black pepper
01
Prep the salad
Slice the cucumbers into rounds or half-moons.
Halve the cherry tomatoes.
Thinly slice the red onion.
Add cucumber, tomatoes, onion, parsley and mint to a large bowl
02
Prepare the dressing
Whisk together the olive oil, lemon juice, vinegar, Dijon, oregano, salt and pepper.
Pour the dressing over the salad.
03
Bring it all together
Toss gently until everything is coated.
Scatter over the feta if using.
Allow to sit for 5–10 minutes before serving.
04
The Trick
Salt the cucumber lightly and let it sit for 5 minutes before making the salad. Pat away excess moisture with paper towel. This helps prevent the finished salad becoming watery.
