Ingredients
- 400g pork mince
- 500g cauliflower rice
- 3 eggs
- 2 tbsp sesame oil
- 1 tbsp olive or avocado oil
- 2 garlic cloves, minced
- 1 tsp fresh grated ginger
- ½ red capsicum, finely diced
- 2 spring onions, sliced
- 1 tbsp tamari
- 1 tsp sesame seeds
- ½ tsp chilli flakes, optional
- 1 tbsp fresh coriander
- Sea salt and black pepper
01
Fry the pork and eggs
Heat 1 tbsp sesame oil in a large frying pan or wok over medium-high heat.
Add the pork mince and cook for 5–6 minutes, breaking it up as it cooks, until thoroughly cooked and nicely browned.
Push the pork to one side of the pan. Add the remaining oil and crack in the eggs.
Scramble the eggs until just cooked, then mix them through the pork.
02
Fry the other ingredients
Add garlic, ginger and capsicum. Stir-fry for 2 minutes.
Add the cauliflower rice and increase the heat slightly. Cook for 4–5 minutes, stirring regularly.
03
Bring it all together
Add tamari, remaining sesame oil and chilli flakes.
Toss everything together for another minute.
04
Time to finish
Finish with spring onions, sesame seeds and coriander or add a fried egg.
NotesDon't overcook the cauliflower rice. You want it slightly firm and fluffy, not soft and watery. A large hot pan makes a big difference.

I had the pleasure of working out on the Great Barrier Reef. Theres plenty of world class reef breaks here but they are fickle.
