Ingredients
Steak bites garlic butter
- 400g of quality beef steak such as sirloin, rump or scotch fillet
- 1 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- ½ tsp sea salt
- ½ tsp freshly cracked black pepper
- ¼ tsp dried thyme
01
Prepare the steak.
Cut the steak into roughly 3 cm cubes and pat them thoroughly with paper towel. Place in a bowl with olive oil, smoked paprika, thyme, salt and pepper
02
Start the broccoli
Heat a large frying pan over medium to high heat.
Add the olive oil and broccoli.
Cook for 3-4 minutes tossing frequently.
Add the teaspoon of water and cover immediately. Steam for 2 minutes and then remove the lid.
Continue to cook until broccoli develops some lovely brown edges but still remains crispy.
Transfer to a plate.

03
Sear the steak
Turn the heat up to high and allow the pan to get really hot.
Add the steak pieces to the pan, in a single layer. Don't overcrowd the pan. You want the steak to sear, not stew or steam.
Cook for approx 1 1/2 to 2 minutes per side, turning as each side browns.
For medium rare, cook less. For well done, cook a little longer.
Once you're happy, turn the heat down to medium, add the butter and garlic. Toss the steak for 30-60 seconds so it all gets covered in the melted butter and garlic.
Add the lemon zest and parsley.

Bring it all together
Finally, return the broccoli to the pan with the steak and toss everything together, allowing the broccoli to pick up the garlic butter and steak juices.

- 2 tablespoons of grass fed butter
- 3 cloves of garlic, finely chopped
- 1 tablespoon of fresh parsley, finely chopped.
- caramalised onion
- ½ a teaspoon of lemon zest
- a pinch of sea salt
Broccoli
- 300 g broccoli, cut into bite sized florets
- 1 tbsp extra virgin olive oil
- 1 tbsp of water
- Black pepper to taste
Notes: The secret is to get the pan HOT before adding the steak. Don't keep tossing the steak. Allow it to sear properly on each side. The caramalised exterior combined with the garlic butter is what makes this dish far more indulgent than the ingredients list suggests.
Optional: A squeeze of lemon juice just before serving, cuts through the richness of the butter and give the dish a lift of freshness.
